  1. Microwave or steam sweet potatoes until soft and allow to cool until easily handled.
  2. Halve and scoop out with spoon into mixing bowl. Mash potatoes with the fruit juices and hot sauce until the mixture is smooth. Fold in the scallions, run and vanilla last. This may be seved immediately or put in a casserole and heated in microwave or conventional oven. Top with cilantro.
