"I created this recipe to use leftovers from Thanksgiving for a day after brunch. It combines the best of the Holiday flavors smoked ham, cranberries, almonds and smoked mozzerella cheese to make a really elegant pesentation for a buffet or it could be put into mini-muffin pans for an appetizer."
1) Prepare a basic white sauce. Melt butter,then whisk in flour. When fully incorporated add milk.Bring to a slow boil, whisking until thickened. Add spices. Remove from heat and cool slightly. Add ham, cheese, cranberries and toasted almonds.
2)Roll puff pastry on lightly floured counter. Brush lightly with melted butter. Cut into 9 equal squares. Stetch gently to enlarge and place buttered side down in muffin cups. Divide filling evenly between the cups.
3) bake in a 400 oven for 15 minutes.Cool slightly, spinkle with finely chopped parsley or paprika if desired. Serve warm.
