  1. in large stock pot place ham, cover with water.
  2. simmer 2 hours
  3. in mean time prepare all other ingrediants.
  4. after 2-3 hours remove ham
  5. add chicken broth, onion, potatoes, and beans
  6. bring back to boil( simmer for 30-45 minutes)
  7. while pot is simmering begin to shred or cube ham
  8. and roll out chilled dumpling dough, cut to 1 in strips
  9. place ham back into pot, bring back to temperature.
  10. when pot is boiling add dumplings, simmer 30 min
  11. add salt and pepper to taste
  12. ***note be careful when adding salt the ham is vry salty, and flavors consentrate during long cooking***
