"Authentic spicy Indian Chicken curry made with all my favourite "Indian" spices. I suggest adding all the optional ingredients because (1.) it's healthier, (2.) it's tastier, and (3.) the more ingredients you add, the thicker the stew and the easier it is to eat with naans. Enjoy!"

  1. Saute chopped onions and garlic in oil in a large pot. Add spices, tomatoes and water. Simmer, then pour in chicken and whatever other ingredients you want to add (potatoes, chickpeas, bellpeppers, etc. You may have to adjust water according to the amount of optional ingredients you add to the pot) and cook for 1 hour and 45 minutes in a covered pot. Salt to taste just before serving with steamed rice or naans. (Remove cardamon pods) May top with raisins, nuts, shredded coconut, yogurt, etc.
