"Delicata squash is a small oblong squash that has pale yellow skin with dark green stripes. It's sweet and smooth enough to eat plain, but the flavor really pops with this medley of shrimp and veggies. This recipe was a clean-out-my-freezer concoction that turned out to be tasty."

  1. 1. Place squash halves hollow-side down in a glass dish with 2 Tbs water. Cover and microwave for 15 minutes. (or bake for 45 minutes)
  2. 2. Saute onion and pepper in oil until tender, then add shrimp and frozen veggies.
  3. 3. Cook until heated through. Sprinkle generously with curry powder, salt and pepper. Turn down heat and let the water from the frozen foods evaporate.
  4. 4. When squash is done, sprinkle with salt and scoop shrimp mixture into each half.
  5. For a light, colorful meal, serve with a salad of mixed baby greens, cucumber and toasted pinenuts.
