2. In a large frying pan, heat a small amount of oil and saute onion for 1-2 minutes.
3. Add grated plantain and cook for 5-7 minutes, stirring occasionally. The plantain has a tendency to stick together, so the more you stir the more the individual pieces will seperate. The plantain should be crispy, but not burnt.
4. Add raisins and cook for another 1-2 minutes, till raisins are heated and plump. Stir in salt to taste and serve.
