"You will LOVE this super easy, but very tasty carrot cake. My grandmother made this for me for my 14th birthday and it's been my favorite ever since. The addition of pineapple makes it super-moist. It's a huge hit at every party or celebration we have, and my husband who hates cake... can't get enough of it."
In a bowl, mix flour, baking powder, baking soda, salt and cinnamon together. Add sugar, eggs & oil and mix by hand. Finally add carrots and pineapple with all the juice, mix together and pour into a greased 9x13 pan.
Bake at 350 for approx 40 minutes. **Note, the cake will appear to not be done in the middle, but you don't want to overcook it. The cake will solidify as it cools.
When cooled completely, frost with cream cheese frosting. ENJOY!
