"Great spanish rice,main course meal. I usually serve it with mashed potatoes. Can be made less spicy using regular rotel."

  1. 1. Melt butter in skillet,add rice. Cook rice till lightly brown,stirring frequently.
  2. 2. Add bell pepper, and onion cook until pepper soft and onion translucent.
  3. 3. Add ground beef, stir while browning the beef to mix all together.
  4. 4. Add tomatoe sauces and rotel, mix well
  5. 5. Cover and simmer low heat about 20 min or until all liquid is absorbed and rice is tender.
  6. Great with mashed potatoes.
