  1. 1) Preheat oven to 400F. Bake empty tart shells in oven until golden brown; about 8 min. cool in tins.
  2. 2) Peel and chop apples into small pieces about 1 cm x 1 cm. put into a bowl with a lid and add sugar and cinnamon. Shake apples until thoroughly coated and ”syrup" begins to form.
  3. 3) Put apple mixture into a small saucepan and cook over medium-low heat until apples are soft but not mushy (about 10 min). Cool this mixture.
  4. 4) When you are ready to serve the mini pies, simply scoop some apple mixture into the shells, heat if desired, and enjoy!
  5. 5) Any addition apple mix can be refrigerated up to 10 days although I doubt they will last that long before being eaten! Just warm and follow the above directions.
