  1. Combine all dry ingredients with a whisk to thoroughly combine. Make a well in the center. Combine zucchini, egg substitute, applesauce, oil and vanilla and pour into well. Stir until just combined. Pour batter into 2 8x4 loaf pans sprayed with cooking spray and bake 45-50 minutes in a preheated 350 degree oven. Bread is done when toothpick inserted in center comes out clean. Cool 10 minutes in pans and then turn out onto rack and allow to cool completely.
