Use a pastry blender to cut the crisco into the flour and salt. Set aside.
Mix the egg,vinegar and water. Add it to the flour mixture. Use a fork to bring it together and work it gently into a ball of dough. Flour a clean surface and roll out the dough to pie plate size..9-10 inch pie plate. fold the crust in half to make it easier to place in the pie plate, then unfold.
Prick the sides and bottom of crust to keep the crust from formng bubbles.
In a large bowl add the 5 cups of fruit.
Mix in 1 tsp lemon juice. Set aside.
In another bowl, mix together :
1 cup sugar and 1/4 cup flour. Pour this mixture into the apricot or peach
mixture. Mix it with a spoon to make sure all the fruit is covered.
Pour the filling into the pie and add
2 Tbsp of margarine to the top of the fruit.
Roll out the top crust. Make sure it isnt too thick. Make slits in it to allow the steam to escape. Place on top of the pie and sprinkle with some cinnamon and sugar.
Top the pie with foil to keep from browing too much.
