  1. 1. Preheat oven to 375 F
  2. 2. Combine the flour, wheat germ, baking powder, baking soda and spices in a small bowl. Set aside.
  3. 3. In a large bowl combine oats, buttermilk, and all of the apple juice. Stir together. Add egg whites, oil, dates and walnuts, mix well. Stir in dry ingredients just until blended.
  4. 4. Spoon batter into 12 muffin cups coated with vegetable cooking spray. Bake until golden brown and toothpick comes out clean from center, about 10-15 minutes(ovens vary). Remove from tins immediately.
