  1. Preheat oven to 400 F and butter and sprinkle 9X13x2" baking pan with flour.
  2. Sift together first 4 dry ingredients, then stir in corn meal. In a separate bowl, slightly beat eggs, then add milk, sour cream and oil. Stir wet into dry ingredients, Then add extras: onion, chiles, corn and cheese. Fold into batter, pour into prepared baking pan, and place in oven. Bake for 15-20 minutes.
  3. Open oven door and sprinkle the bread evenly with grated cheddar cheese saved for topping. Do not worry about the sides. The cheese will melt down.
  4. Let bake for another 15-20 minutes and check for doneness with a butter knife or long toothpick (it will come out clean). May top with oregano or cilantro for decoration and extra flavor
