"My roommate and I came up with this concotion when we were short of food in the house. It turned out to be fabulous AND low-carb! The cream cheese with chicken and peppers really brings out a wonderful flavor!"

  1. 1) Pre-heat oven to 375F
  2. 2) Dice the onion and the red pepper. Put a small layer of both in the bottom of a 13x9x2 pan.
  3. 3) Wash the chicken and lay on top of the layer of peppers and onions.
  4. 4) Heat the 8oz of cream cheese in the microwave for 2 mins.
  5. 5) Stir the fajita seasonings into the warmed cream cheese.
  6. 6) Spread the cream cheese over the chicken so that all of the chicken is covered.
  7. 7) Sprinkle the remaining diced onion and peppers over the top of the chicken
  8. 8) Sprinkle the 8oz of shredded cheese over the chicken
  9. 9) Place in the oven for 45 mins.
