  1. Saute onion and red pepper in oil till softened. Combine onions and red pepper with remaining ingredients in large bowl. Spray 13X9 metal baking dish or jelly roll pan with Pam. Form meat mixture into six 3 inch wide mounds. Bake at 350 for about 40 minutes till instant read thermometer inserted in a meat loaf reads 165.
