"A very simple and basic tuna with noodle casserole. I've been making this for over 15 years and it's one of those "great comfort foods" that you really can't find in resturants."

Directions

  1. Preheat oven to 350 degrees
  2. Cook noodles till "al dente"(do not cook fully, will finish cooking in oven)
  3. In a large skillet or pot, saute the onions, carrots, and celery in about 2 Tbls. of olive oil for 3 minutes, season with salt and pepper.
  4. Add the two cans of mushroom soup and one can of water to vegetable mixture and cook for 3-4 minutes,stirring constantly.
  5. Drain the tuna and add to the sauce mixture and cook for another minute.
  6. Add the drained noodles, peas and canned mushrooms to the tuna sauce, cook another minute-taste and season with salt and pepper if needed.
  7. If noodle mixture is already salty, you can add a little more water.
  8. Transfer the noodle mixture into a 13x9x2 baking pan, cover with aluminum foil and bake for 35-40 minutes or until bubbly.
  9. Uncover and top the casserole with crushed potato chips and bake additional 5-10 minutes.
  10. Take casserole out of oven and let it sit for 10 minutes to thicken.
