In a saucepan of heated oil, saut garlic and onions until soft and slightly browned. Add cubed eggplant, sweet potato and a ladle of liquid from the can of chopped tomatoes. Allow to simmer, until juices have been absorbed.
Add can of tomatoes, curry powder, turmeric and cumin, and simmer until sweet potato begins to soften, 15 20 minutes. If juices are absorbed before the sweet potato has fully cooked, add a small amount of water and cover.
Place the pizza crust on a clay slab or pizza pan sprayed with non-stick spray. Spread the lentils evenly on the surface of the crust out to the edges, then evenly spread the sweet potato mixture directly on top of the lentil and bake in oven for 10-13 minutes or until edges are browned.
*to cook lentils simly follow directions on package and spice with curry powder, ginger, cumin and olive oil.
