  1. Combine flour and next five ingredients (through baking powder) in a large bowl and stir well. Make a well in the center of the mixture.
  2. Preheat oven to 350 degrees.
  3. Combine zucchini, applesauce, egg sub, oil, and vanilla. Stir well. Pour into the flour mixture, and stir well again.
  4. Coat two 7.5 x 3 inch bread pans with cooking spray. Split batch evenly and pour into pans. Bake for one hour and fifteen minutes, approximately. Depending on your oven, it may be sooner. Test: stick a toothipick into the center, and when it comes out clean, the bread is ready.
  5. Let the pans cool once they come out for ten to fifteen minutes. Take them out of the pans, and let them cool on a wire rack.
  6. Note: You can make a double, triple, or even quadruple batch of this recipe and freeze loaves for a long time. Then, weeks later, you can pull one out, let it defrost overnight, and enjoy!
