"This dish combines one of my favorite light desserts - marinated strawberries - with a deliciously simple spinach salad. Crisp bacon, toasted pecans and feta cheese add to the sweet-salty appeal of this awesome salad. Add grilled chicken to make it a fabulous light meal!"

  1. 1) Make the marinated strawberries. Place the berries in a bowl and top with the vinegar, pepper and brown sugar. Toss to combine, then cover tightly and refrigerate for at least one hour, stirring at least once as the berries marinate.
  2. 2) Next, prep the salad ingredients. Toast the pecans over low heat until lightly golden and fragrant. Chop the bacon into bite-size pieces and saute over medium heat until crispy. Drain the bacon on paper towels.
  3. 3) Finally, assemble the salad. Divide spinach evenly on two plates; add strawberries to each salad and top with pecans, bacon and feta. There will be a bit of marinade left in the bowl that held the strawberries; drizzle this evenly over the top of each salad. (It won't look like much dressing, but the strawberries are so juicy, they'll add a lot of moisture to the salad.)
