1. Saute ground meat with chopped onion until browned. Add bell pepper and garlice and continue sauting a few minutes.
2. Add your spices, rotel tomatoes and corn. Simmer 10 minutes. Cover remove
from heat and set aside while you cook the noodles. Drain noodles well and add to the meat/vegetable mixture. Add two cups cheese, mix and turn into casserole - top with additional 1/2 cup cheese. Cover, back in 350 preheated oven for 20 minutes.
