In a large mixing bowl, combine cream cheese and dry pudding mix. Add the drained pineapple; mix well. (Note: You will get better results if you mix these ingredients by hand instead of using an electric mixer.) Shape the mixture into a ball and remove from bowl. Roll the ball in chopped pecans and transfer to a serving platter. Cover and chill for at least one hour to allow flavors to blend. Serve with cinnamon graham crackers for spreading and dipping!
