Combine water, oil, sugar and yeast and proof 5-8 minutes. Beat in 5 c. flour and the salt. Add additional flour one c. at a time, kneading lightly. Place in a clean bowl, cover and rise 45 minutes. Punch down, divide into 3 sections, cover with an upturned bowl and rest 15 minutes. Take one section, divide it into thirds and make each into a rope about 14 inches long. Braid the three together, tucking under the ends. Repeat with two remaining sections. Cover with a cloth and rise 30 minutes. (Turn on the oven after 15 minutes.) Bake 400 degrees, 30 minutes. Place on wire reack and brush with melted butter.
