Basic Cheese Pupusas

  1. 1) In a large bowl, mix together the Masa Harina, salt and water and knead well. Knead in more water, drops at a time, if neccesary to make a moist dough. it shouldn't crack at the edges when you press down on it. Set aside to rest 5-10 minutes.
  2. 2) in a small bowl, stir together the cheeses, heavy cream and scallions to make a paste
  3. 3) Form dough into 8 balls and press your thumb into the center of each. Fill holes with filling and fold dough over to enclose it. flatten and smooth between both hands into a round, making sure no filling seeps out. flatten to 1/4" thick, using wax paper or just your hands, keeping the shape round
  4. 4)lightly grease a skillet. over medium heat cook each Pupusa for approximately 2-3 minutes on each side until browned.
  5. Curtido Preparation:
  6. mix all ingredients together (tastes best if left in the fridge overnight)
  7. When ready to serve, drain Curtido and serve on top of the Pupusas
