Using the package directions, make enough batter for each person to have one large (6" - 8") pancake. Cook as directed. Place one pancake on each plate.
Spread each pancake with a thin layer of applesauce. Layer with one half of a sliced banana, pineapple, coconut, and pecans. Lightly drizzle with syrup. Top with Reddi Whip or Cool Whip and a cherry. Serve immediately.
