"This is a staple in our house, I have been making these for years, all the ingredients are mixed in one bowl, so these are very simple to make. These are wonderful made with almond extract instead of vanilla, and mini chocolate chips may be added if desired."

  1. Set oven to 350 degrees.
  2. Line 18 muffin cups with paper liners.
  3. In a large bowl, beat ALL ingredients with an electric mixer on medium speed until well blended (about 30 seconds).
  4. Beat on High for 3 minutes.
  5. Divide evenly into prepared muffin cups filling half full.
  6. Bake for 20-22 minutes, or until cupcakes test done.
  7. Immediately remone from pans.
  8. Cool completely.
