Italian Sausage & Penne Pasta w/Vegetables

  1. ~ Brown Sausages in heated 1 Tbsp olive oil breaking apart into small pieces as it cooks. Remove from pan.
  2. ~ Cook pasta to al dente, remove from water & set aside.
  3. ~ Over medium heat, sautee carrots, onions & garlic cooking for about 5 minutes. Add zucchini & mushrooms and continue cooking for another 3-5 minutes or until al dente.
  4. ~ Mix sausage back into vegetables.
  5. ~ Add heavy cream & parmesean cheese, bringing up to a boil.
  6. ~ Immediately add pasta, stirring everything together until well incorporated.
  7. ~ Reduce heat down to low-medium
  8. ~ Add basil, tomato paste and salt & pepper mixing together until combined.
  9. Serve hot with warm bread. Enjoy!
