Whisk together egg white, salt, and cornstarch. Cube meat and marinate for 1 hour. Drop in to boiling water and poach for 1 minute. Drain and set aside.
Preheat wok with vegetable oil until very hot but not smoking. Add Garlic and Chili Paste, sautee for 1 minute. Add meat of your choice, and sautee briefly, about 3 minutes, until done through. Add soy sauce, rice wine, and sesame oil. Cook for 1 minute. Add Stir fry vegetables. Mix water and cornstarch in small bowl, add to wok. Cook until sauce thickens.
