  1. Heat oil & butter in large skillet over medium heat. Mix together potatoes, eggs, & milk in large bowl. Then sprinkle on top, flour, baking powder, seasonings, parmesan cheese, cheddar cheese & bacon bits. Mix all together with a fork. Spoon about 2 Tbls. into pan to form each patty. Cook til golden brown on both sides, then drain patties on paper towels. Can be served plain or with Ranch Dressing as a dip.
