"Easy Peel" Perfect Hard Boiled Eggs!!

You might be hesitant because of the longer simmering time, but this is part of the secret. Deviled eggs look beautiful because they peel perfectly. Try it! You'll never cook them any other way again."

  1. In a large heavy sauce pan bring the water, vinegar & salt to a vigourous boil. *Very important to add the eggs to the boiling water, this helps to 'release' the membrane resulting in eggs that peel perfectly.
  2. Add the eggs very carefully to the boiling water using a large spoon to lower them easily without cracking. If your eggs have any cracks in them before cooking, don't use them as they will leek out while cooking.
  3. Return the water to a constant very low simmering boil, making sure they are not boiling too hard, or not simmering at all. Set the timer for 26 minutes after they are simmering.
  4. When done, drain the hot water and Immediately start to run cold water over them, making sure the water stays cold. After about 3 mins. or so in the cold water you can peel them under cool running water, starting by cracking the eggs at the large end of the egg to release the membrane. The peels practically fall off the egg!
  5. These stay fresh in the refrigerator for 1 week after being peeled.
  6. *Note: Use eggs that are not freshly laid. Buying them in the store usually works fine for those of us who don't live on a farm!
