  1. Saute onion & garlic in olive oil until wilted. Add green pepper & saute until just limp. Add tomatoes, thyme, parsley, cayenne pepper, salt & pepper. Cook for 5 minutes. Add okra (still frozen) and a little reserved tomato juice from the canned tomatoes. Cover & cook 15 minutes until okra is tender.
