Bacon and Mozzarella Chicken

  1. Preheat oven to 180C.
  2. Lay out the chicken thighs on a baking dish greased with 1 tsp olive oil.
  3. Spread the remaining olive oil on top of the thighs, then evenly sprinkle the fresh oregano, salt, pepper and smoked barbeque seasoning on the chicken.
  4. Place a cheese stick on top of a thigh fillet and fold chicken over.
  5. Then wrap fillets around with bacon and secure with toothpicks.
  6. Repeat with remaining chicken.
  7. Lay chicken pieces onto a baking dish and bake in oven for approximately 30 minutes or until the outer thighs and bacon are brown and crisp.
  8. Turn over chicken pieces 10 minutes before end of baking period.
  9. After baking, remove the toothpicks.
  10. Serve hot with your favourite staple (rice, salad or bread).
