Heat the olive oil in a heavy saucepan over med-high heat. Add the onion, garlic and ginger and saute' until tender. Reduce the pan heat to low.
Add half of the rum and all remaining ingredients. Stir over low heat for a few minutes; taste and adjust seasonings. Simmer 5 or so minutes more. Remove from heat and add remaining rum. Stir to combine.
