  1. Preheat oven to 400°.
  2. Mix cookie base ingredients.
  3. Spread it in a greased 9 x 11 inch pan.
  4. Bake ~25 min or until the top is dry.
  5. Mix the lemon topping ingredients and pour it over the baked cookie base. Return the pan to the oven and bake for ~30 min or until the topping is no longer liquid.
  6. Cut into bars while still warm. Cool before removing bars from pan.
  7. Note - The lemon “topping” will now be on the bottom, so flip over to serve.
