"Spicier version of traditional vegetable soup made with chicken. Can be made in a crockpot or on stovetop. Chicken thighs work very well for this recipe. Other vegetables can be added as desired."

  1. Add all ingredients to a 4 Qt pot and bring to a boil. Reduce heat to low, cover and simmer for 4 hours. Serve over Mexican cornbread.
