Preheat oven to 375 degrees F. Grease a 9 x 13. Mix dry ingredients and hold aside. Beat shortening and miracle whip briefly on medium. Add cherry juice, milk, and almond extract, mixing on low to blend in. Add the eggs, mix to blend in. Add the dry ingredients. Beat 2 minutes. Fold in cherries. Cook 25 to 35 minutes, or until a toothpick comes out clean. DO NOT OVERCOOK. Cool and top with icing. Mix all icing ingredients together and add cherry juice to chosen thickness and taste.
NOTES: Use Asian or fine-grained white rice, sweet rice, and tapioca flour.
