  1. Heat a wide frying pan over medium heat with butter. Add garlic, then onion 1 minute later, then shiitake 2 minutes later. Stir often for 5 minutes and reduce to low. Add argula and let saute while pouring in balsamic vineagr, cover and sit for 3 minutes.
  2. Meanwhile, bring 4 quarts water with a pinch of salt to boil. Add pasta and cook just until tender to bite (about 3-4 minutes). Drain well and place in a warm wide bowl adding olive oil to keep from sticking or clumping together.
  3. Add pasta sauce to shiitake-argula mix and stir often on low for 2 mins or so.
  4. Add S&P for taste and chili flakes if desired. Spoon sauce over pasta; mix well.
  5. Enjoy it with some nice parmesan focaccia, a bottle of pinot noir and great friends!
