"This pasta dish packs a punch with the garlic infused shittake mushrooms and arugula that is easy to make but tastes like it came straight from your favorite restaurant. Serve it with some nice focaccia."
Heat a wide frying pan over medium heat with butter. Add garlic, then onion 1 minute later, then shiitake 2 minutes later. Stir often for 5 minutes and reduce to low. Add argula and let saute while pouring in balsamic vineagr, cover and sit for 3 minutes.
Meanwhile, bring 4 quarts water with a pinch of salt to boil. Add pasta and cook just until tender to bite (about 3-4 minutes). Drain well and place in a warm wide bowl adding olive oil to keep from sticking or clumping together.
Add pasta sauce to shiitake-argula mix and stir often on low for 2 mins or so.
Add S&P for taste and chili flakes if desired. Spoon sauce over pasta; mix well.
Enjoy it with some nice parmesan focaccia, a bottle of pinot noir and great friends!
