  1. Split or butterfly chicken breast, crumble feta cheese on one side of breast, flip otherside back over to cover cheese.
  2. In a small bowl, beat egg and use pastry brush to brush egg on to chicken on one side. In a shallow dish place bread crumbs and place breast egg side down, brush opposite side and flip. Make sure breast is covered evenly. Place in 9x13 dish. Repeat for all chicken breasts.
  3. Once finshed, sprinkle shredded and parmesean cheese over chicken. Lightly sprinkle basil on top.
  4. Cover with foil and bake for 40 mins at 375 degrees. Remove foil and bake for 15 minutes more. Remove from oven and serve. Great with pasta or couscous sides.
