  1. Preheat oven to 450 degrees. Arrange lemon slices in single layer on bottom of 13x9 inch baking dish. In large bowl, combine oil, lemon zest and juice, salt, pepper, garlic, and rosemary, then toss in remaining ingredients to coat. Lay chicken pieces over the lemon slices, then top with the veggies. Bake uncovered for about 50 min, until chicken is cooked and potatoes are tender. Toss one more time to coat with sauce before serving.
