Hearty Vegetable and Bean Chili


"This easy receipe is a nice alternative to the typical bean and corn vegetarian chili recipes. After it simmers for a while, it reaches a think and saucy consistency. Add a sprinkle of cheddar cheese and a Tbs. of sour cream immediately before serving. Also, serving with a sliced bagette or corn bread mades this a one-dish meal."

  1. Heat 2 Tbs. olive oil in a deep skillet over medium heat.
  2. Add onions, garlic and peppers and sautee for 2-3 minutes.
  3. Add carrots and celery and sautee for an additional 3-5 minutes.
  4. Add diced tomatoes, black and pinto beans, tomato paste, and seasoning. Stir well.
  5. Bring to a boil, cover deep skillet, and simmer for 1 hour stirring every 15 minutes.
