  1. In a food processor process oatmeal until it is the consistancy of flour. Add rest of ingredients except chocolate chips and process until well blended. Remove from food processor and add chocolate chips. Roll into balls and place on an ungreased cookie sheet. Flatten with fork or glass. Bake at 350 degrees for 8 minutes. Cool on the cookie sheet for at least 10 minutes until set then transfer to a rack to finish cooling.
  2. Note: If you do not have a food processor, use a blender to process the oatmeal and mix other ingredients by hand. The dough is very stiff so you would almost need to knead it instead of stirring.
