Cook bacon until crisp. Reserve 2 Tbsp. drippings, then drain and crumble bacon. In large bowl combine flour, sugar, baking powder and salt. Stir in bacon and 1 cup of cheese (reserve 1/2 cup for topping). In small bowl combine egg, milk, butter and reserved bacon drippings. Add to dry ingredients' stir just until moistened. Divide batter among 12 greased muffin cups. Sprinkle remaining cheese over top of muffins. Bake at 350 for about 20 minutes.
If using swiss cheese, increase butter by 1 Tbsp.
Variation: substitute 2/3 cup chopped cooked ham for bacon.
