"When I was growing up an elderly lady in our neighborhood had a huge lemon tree that yielded large lemons. She baked this pie for neighbors. It's my favorite lemon pie. Always brings good memories of this special lady back to me."

May we suggest



  1. Preheat oven to 350 degrees.
  2. 1. In medium saucepan, stir 1 cup sugar with 1 1/4 cups warm water and butter. Cook over medium heat stirring constantly until mixture dissolved.
  3. 2. Mix constarch with three tablespoons water, stir until disolved. Slowly add to sugar water mixture, continue stirring until mixture is thick and clear.
  4. 3. Add lemon and peel - cook about two more minutes.
  5. 4. Add egg yolks beaten with the 2 tablespoons of milk to the mixture and bring to a boil stirring constantly.
  6. 5. Pour into baked pie shell and top with meringue - bake until meringue is browned.
  7. To Make Meringue:
  8. Add the Vanilla and Cream of Tartar to egg whites. Then add 1 Tablespoon of sugar at a time, beat eggs whites until the sugar is dissolved before adding the additional Tablespoons of sugar.
  9. NOTE: I am not sure of the baking time, but I believe it's about 15-20 minutes, so keep an eye on it.
