old fashioned meat loaf


"This is an update of a recipe my mother used many, many years ago. At the time I thought it tasted much like her regular English-style cooking--always with sage, savoury etc. I have come to realize it was pretty good and not all meat loaf needs tomatoes to be flavourful. I have updated it to meet today's meatloaf challenges but seasonings are the same."

  1. in large mixing bowl combine egg, bread crumbs, and broth. Stir in onion, salt and seasonings. Add extra lean ground beef and mix well. Layer into loaf pan, smoothing each layer with back of large spoon as added. Bake at 350 degrees for 45-50 mins. or till top and edges are slightly brown Remove pan from oven, drain as needed. Meanwhile in small bowl combine brown sugar, ketchup and HP sauce. Spread over meatloaf and return to oven for 10-15 mins. Drain again if necessary. Let stand for 5 mins. before serving.
  2. In order to make best use of the temperature I add potatoes and acorn squash for baking. Potatoes go in 15 mins before meat loaf, acorn on buttered cookie sheet for same am't of time as meat loaf.
