In medium saucepan heat oil. Rinse and pat dry pork loin, season with salt and pepper. Flour pork, shaking off excess. Brown on both sides, about 3 minutes each side. Add onion, garlic, ginger, soy sauce and vinegar. Bring to boil, then lower heat and simmer 30-35 minutes. If sauce gets too thick, add 1/3 cup of water. Add carrots and broccoli during last 5 minutes of simmer. Garnish with fresh cilantro if desired, serve over hot rice.
