"This has been a household staple since my co-worker made it for a potluck last year - I got the recipe that same week and we have it probably weekly. It meets all my cooking requirements: make all in one bowl, quick, needn't get any particular ingredients for it beyond what's likely to be in house anyway... Plus, lots of spinach. My toddler loves it, as do I. It keeps really well in the fridge and in the freezer. I've also made it and put it in the fridge uncooked, then put it in the oven later that day.
