  • Cook

  1. Preheat oven to 350 F.
  2. Grease the bottom of a 9x5x3-inch loaf pan.
  3. Beat the zucchini, sugar, oil, milk, eggs, vanilla, and orange peel in a large bowl using an electric mixer.
  4. Mix the flour, baking powder, baking soda, and salt in a small bowl.
  5. Stir the dry ingredients into the liquid.
  6. Fold in the cranberries, nuts and rasins.
  7. Pour into loaf pan.
  8. Bake until a knife inserted near the middle comes out clean, about 60 minutes.
  9. Cool before serving.
