  1. Heat a medium sized skillet on med-high, and add olive oil. Take 2 shallots and add to hot pan. When they begin to brown, add mushrooms and sprinkle with garlic powder and pepper to taste.
  2. In a 4 quart stock pot, heat 2 cups stock to boiling and add the rice mix, following the cooking directions for the time indicated.
  3. Turn down heat on the skillet to medium and add carrots. Cook until just tender. Add zucchini to pan and toss until completely heated.
  4. Add vegetables and the rest of the stock to the pot and cook until rice is done.
