  1. Cook the steaks in some of the butter and the oil to your liking. Keep them warm, in the same pan, sautee the mushrooms and reserve. In a large saucepan, sautee the shallots then add the wine and reduce it by two thirds on high heat. Add some salt, add the mushrooms and test the sauce add more salt and pepper if needed. Add this sauce to the steaks and top with the parsley. Goes real well with mashed potatoes!
