Mexican Cornbread Casserole

"This is a really great recipe given to me by my granny. I don't measure for this one, but am giving approximate measurements. This is very, very easy and open to lots of interpration by you. I like to use Corn Muffin mix because the flavor is better."

  1. Brown hamburger meat, add onions. When onions are clear, add tomatoes, Ro-Tel, and Beans. Cook until hot. Pour meat and bean mixture in a 9x13 baking pan. Top with cheddar cheese. Make the corn muffin mix according to the directions. Pour over top of meat and bean mixture. Cook in a 350 oven for 30 minutes. Dish is done when a knife or toothpick ran through the center of the corn muffin mix comes back clean. One box of corn muffin mix is sufficient for a small but deep casserole dish. A 9x13 pan may need 2 boxes of mix.
