  1. Preheat the oven to 400 degrees F (200 degrees C). Grease a large baking sheet.
  2. Spread the sliced eggplant, squash and garlic cloves out onto the prepared baking sheet and place into the oven. Bake for 15 minutes.
  3. In a large serving bowl, whisk together the lemon juice, olive oil, vinegar, parsley, oregano, salt and pepper; set aside.
